For a seasonal treat try this easy, moist and not-too sweet dessert. Perfect on its own or with a scoop of your favourite ice cream.
- 1/2 cup honey
- 1/2 cup coconut oil
- 1 cup greek yogurt
- 2 eggs, lightly beaten
- 1 tsp vanilla
- 1 cup all-purpose flour
- 1 cup Emmer flour
- 2 tsp cinnamon
- 1 tsp baking soda
- 3 large apples (or 4-5 small), peeled and sliced
- 1/2 cup nuts, chopped
- Preheat oven to 350 degrees. In a large bowl mix together the honey, oil, yogurt, eggs, and vanilla.
- In another bowl combine the all purpose flour, Emmer flour, cinnamon and baking soda. Add the flour mixture to the wet mixture and mix gently. The dough will be stiff but don’t worry the juice form the apples will moisten the cake as it bakes. Fold in the apples and nuts.
- Pour the batter into a greased 9″ square or round pan. Bake for 1 hour or until a toothpick inserted in the centre comes clean. Remove from oven and let cool completely.
