Buckwheat Pumpkin Spice Muffins

Pumpkin Buckwheat Muffins

 


With fall comes pumpkin season! This recipe combines nutty buckwheat with pumpkin for a richly flavoured muffin sweetened with a touch of honey.

These muffins are very lightly sweetened, so if you like a sweeter treat you may want to a bit more honey, sugar or sweetener of you choice.

Ingredients

  • 1-1/2 cup whole wheat flour
  • 1 cup buckwheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp allspice
  • 1/4 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1/2 tsp sea salt
  • 3 eggs
  • 2 cups pumpkin puree
  • 2 tsp vanilla extract
  • 2 Tbsp cup oil canola oil
  • 1/2 cup honey
  • 1 cup buttermilk

Preparation

  1. Preheat oven to 350
  2. In large bowl, beat eggs, then add oil, buttermilk, vanilla and honey. Beat until well combined, then mix in pumpkin puree.
  3. In another bowl, combine buckwheat flour, whole wheat flour, baking powder baking soda and spices.
  4. Add flour mixture to pumpkin mixture and mix well. Pour into muffin tray, filling each to the top. Bake for 20-25 mins
